A Happy Healthy PantryThis article contains tips for organizing a happy, healthy pantry, and how a healthy pantry is a commitment to your overall health.

Your 9 to 5 is done. Let’s face it, when is full time just 8 hours?  Its late and the kids are ready for dinner. Temptation creeps in. You find yourself thinking to yourself, “Let’s just grab something to eat. McyDee’s is on the way home. I won’t have to cook or do dishes.” Don’t do it girlfriend! Just say no! There is an easy way. Healthy cooking doesn’t have to take long, a lesson I wish I had learned long ago. Get yourself a high quality blender, a kicking pantry and you’re in business.

Measuring your Pantry

My pantry started with a mix of containers hidden behind other containers, some missing labels and general disarray.  The first step to organizing a happy and healthy pantry is to empty the pantry and begin to organize everything by height.  I put the taller containers in the back and the shorter ones up front, then realized that I lacked enough tall containers.  Next, I pulled out the measuring tape, measuring the height, width and depth of each shelf.  Additionally, I took pictures of my “before pantry” for reference.  I was now able to purchase the right sized containers for a perfect fit and easy organization.

Note, you absolutely must take your measuring tape to the store with you. It’s so much easier to measure the containers at the store than to try to find the dimensions of the pieces on the boxes/labels.

Labeling Your Containers

I got the cutest chalkboard labels off of Amazon!  My only regret is that I didn’t order more.  At first, I thought the large labels would be too large, but in retrospect they were perfect.  Be sure to place the labels near the top of the jars, so they are visible even with smaller containers in front of them.

The labels are vinyl and survive a wash.  I’ve found that these are much higher quality (and cost less) than containers with chalk labels pre-attached.  Links to purchase the labels and other items can be found at the end of this article.

Filling Containers and Writing on Labels

After filling up each container, make sure to write the name of the item on your label.  The great thing about chalk pens are the wide variety of colors!  I went with a simple white to contrast the black label but feel free to be creative with your labeling.  The only downside to chalk pens is that the tip would sometimes get “fuzzy”.  A simple solution to this problem is to keep a pair of scissors handy.  When the need arises, cut the felt tip to make it more pointed.

Every year, more children are diagnosed with diabetes, lupus, RA and autism.  Rounds of antibiotics can take their toll on our sweet little ones.  One in twelve Americans, and one in nine women, will develop an auto-immune disorder.  Nutrition starts at home and healthy food should be within arm’s reach.  Committing to organizing your pantry should include committing to organizing a healthy pantry.

Earlier this year, my daughter was diagnosed with Lupus.  When we found out, I threw out almost everything in my pantry and tried to start fresh.  I purchased books on Amazon to gain more knowledge and understanding of what she could eat that wouldn’t increase her pain.  I was ready to do everything in my power to keep my family in optimal health.  One of the first things we did was get food allergy testing done.  This helped us discover her gluten and dairy allergies.  We also had nutrition testing, to find out about any vitamin deficiencies.  Just by changing diet alone, there was very notable progress.

To all parents out there, I wish your children a happy and healthy future, and wish for you the knowledge to guide them there.  It can be expensive to switch gears, especially initially.  But the way I see it, it’s better to spend on groceries than at the doctor.  Fill your pantry with an assortment of healthy choices.  Mine contains a wide variety of legumes, nuts, and dried fruits, as well as gluten free flours including Amaranth and Water Chestnut.

Tips For Making Guests Feel Welcome In Your Home

Making your guests feel welcome in your home is an art that is easy to master.  From the time you open the door and invite your guest in to the time they leave, these are simple tips that make a real difference on the comfort level a guest will experience when you welcome them into your home.

A Nice Greeting.  A nice greeting goes a long way.  Your visitor may have had a rough drive, or a rough day.  A simple greeting can help them focus on the event.  It may not be convenient, but not allowing guests to linger outside the door for too long is a good way for them not feel cast out from the get go.  If you feel you may be too busy to see and welcome everyone upon arrival, ensure your close entourage or family are available and informed to answer the door and greet the guests.  Its obvious, but a reminder is a good idea in this case.  Some light music can also help.

Show your pearly whites!  The host with the most is always smiling, and all their guests automatically feel welcome.  My brother is known for being an amazing host.  I have always seen him welcome his guests with a greeting.  And like clockwork, a few moments later, he’ll offer to make each new visitor a drink.  This is a nice trick I picked up from him.  If you start with a drink and directing your guests to the appetizers, they can start munching, and get into the party mood even faster.  You can also learn a lot just by looking around ever so often.  You’ll want to train yourself to do this if you don’t already.  If your guests are smiling with a drink in hand and a plate of munchies, you can be assured it will be a great night.  If you see people with a puzzled look or people rubbing their arms you may need a quick check.  For instance, we’ve had our AC break down during a dinner party once, so we had to get the fans going pretty quickly.  The key to maintaining a good mood is maintaining a good smile, and with it an accommodating attitude.

Potluck Tasks

Significance and Contribution.  According to Anthony Robbins, Significance and Contribution are two of the 6 basic human needs.  Now that you’ve already made your guest feel significant with a gracious welcome, you can move on to allowing them to contribute.  Never feel shy about asking for help.  Moreover, don’t try to do it all yourself.  Share the love around.  Take advantage of this human need to contribute and assign duties that you don’t want to do yourself – If you’re not much of a dishwasher, assign a “Washing Dishes” task.  You can assign it to your nephew who may be a college student with no time/place to cook. Setting the table can also be a task you assign (unless you’re “Type-A”, like me, and want to ensure the table is set just right to your liking).  A good thing you can do with Potluck Buddies is create a “Tasks” category on your menu and either request for task volunteers or assign specific tasks to specific people.  You may want to assign setting the table to a creative person who will set your napkins, coasters, and other items in a sensible manner.  Of course, you can also assign food dishes to specific people.  I like to assign rice to my friend Renae.  She makes it perfectly every time.  (Mine is usually too mushy.)  I can’t be great at everything. *Sigh*

Kitchen Comfort.  Review your final list before the party, so you can figure out fridge space, what will need the oven, and what will need the microwave. If you’re using Potluck Buddies to plan your potluck party, you’ll know who is bringing what so this should be even easier!  The most common party problem my husband and I have seen is the moment when you run out of ice!  So, make sure to always have a big cooler handy and fill it with ice before guests start to arrive.  Also, be sure to have an ice scooper near the cooler, so people aren’t using their hands.

Silverina BowlUse Fancy dishes.  You don’t have to break out the fine China for each and every person, unless you want to of course.  Even if you want to use disposable or simple stacked dishes for individual servings, fancy serving trays can help make the serving station even more appealing. For getting fancy serveware on the cheap try TJMAXX or Home Goods.  No, they are not paying me, I just really love them. They usually sell a Silverina line of glass bowls that are really nice.  (They’re more expensive on Amazon based on my last search.)  The one in the pic is from TJMaxx.  I got it for only 12 dollars!

 

Steady & Ready:  Keep whatever you can on low in the oven.. I love that trick.  Sometimes I’ll order from a restaurant, place in fancy dishes and stick it in the oven on 200.   It’s great because you can take it out and immediately place it on the table.  P.S. – Remember to keep your oven mitts handy!  I usually have my serveware decided for appetizers and dinner items.  Even during Thanksgiving, when we use large foil trays, I don’t plan out the serving trays, but I do ensure I have a general idea as far as what table I will serve my appetizers, main meal, as well as dessert.  If serving on a dining table, keep your coasters handy or on the table.  Depending on size of the potluck party, I will use my granite counter tops as a serving station.

Kids.  If you have plenty of seating you’re fine but growing up in a large family, we learned to make do.  I usually keep a large plastic tablecloth handy and set it on the floor so kids can all eat together.  Even if you aren’t worried about your rug, a colored tablecloth makes it obvious and allows them their own space.  Be careful not to put teenagers and small children together.  For a while, I thought my teens loved hanging out “in a separated” space, until one day my daughter told me, “Mom, I don’t want to sit in the kids section.”   So you may want to keep age gaps in mind when doing the seating.

 

 

After Party Tips.  Take pics and send Thank You’s – This reminder is good. Your guests will feel a sense of connection with the image.  Based on Huffington Post’s Photography and Psychology, “because an associative mnemonic already exists in your brain, the image lodges itself in your consciousness.”  So it is a nice way to ensure your guests look forward to your next gathering!

Be in the Moment.  This is a given and also a point stated in our Tips For Hosting Potluck Parties article.  This remains relevant for getting those rave reviews.  Guests will sense when you’re not all there and also when you are truly listening.  The truth is, you’ll be happier when you are in the moment.

Here are some tried and true tips for hosting potluck parties that your guests will remember.

Create a theme and/or food style

You may have a Hawaiian Luau with tropical cuisine, or an around the world theme with an international food theme.  It’s your potluck, so make sure to have fun with it!  If you have fun creating the theme, you can rest easy knowing that your guests will have just as much fun when they arrive.  A theme also makes it easier to match dishes that combine harmoniously into appetizing flavors of your choice.  You can also match your music and ambiance to your chosen theme.  Listening to your themed playlist while organizing your potluck can help to spark even more great ideas for your party.

 

Be Specific with Your Menu

Create your potluck with potluckbuddies.com.  This will ensure you don’t get 10 plates of mac and cheese.  You can organize your menu by requesting specific items and assign them to a particular person.  Simply add people to your guest list, assign items to them and then send your invites.  And requesting items is even easier.  Simply mark “request” when you add menu items and anyone that RSVP’s for your potluck can choose to bring any of the requested items.

 

Consider and Communicate Space

Take a look at your menu and communicate oven space and counter space to your guests.  Certain items may require the use of the oven or stove.  Others may need freezing or a last-minute garnish.  Ensure you have what’s needed, and if not, provide options to potluck guests in advance.  If it is a small crowd and you have two ovens you may tell your guests, “Show up early and cook with us!  We have two ovens.”  Or if you encounter a problem with your fridge, be sure to let your guests know, “My ice maker just stopped working.  Can someone bring a few bags of ice and a cooler?”  These types of considerations and communications in advance keep the party going smoothly and prevent last-minute trips to the store.

 

Serve-ware

You can request guests to bring their own serving trays.  Or, if you want to get fancy, you can let them know that you will be providing serving dishes for some or all items.  Providing a themed serving arrangement can also add a special touch when hosting potluck parties.

 

Assign Helpers

Add a Helper category to Potluck Buddies signup menu.  Don’t be shy.  Assign tasks such as “set the table”, or “decorate”.  Not all people may be willing to play chef, so having other options available is a good plan.  Some helper tasks are perfect for the kids, allowing them to feel more involved with the party.

 

Take Home Containers

If you are one of those people with an overflowing refrigerator, it may benefit you to have cheap plastic containers available for guests to pack their take home goodies.  This also helps speed up after-meal clean up and gives your guests a party reminder in the form of a tasty midnight snack of their favorite dish.

 

Be In the Moment

Remember why you are hosting potluck parties.  Joy is infectious.  Share love and laughter with your friends and family.

Holiday Cupcake With A Peppermint Twist

This quick and easy holiday cupcake is sure to be a hit at your next potluck!

Peppermint Twist Cupcakes

Ingredients:

2 boxes, Ghirardelli Chocolate Squares (Peppermint Bark flavor)

10 Candy Canes

3 boxes, Cupcake Mix

Icing

(Makes 80 cupcakes)

 

To keep it simple, you can use any brand of cake mix to make your cupcakes.  At our last potluck, we made two boxes of chocolate mix and one box of red velvet.

For the icing, a white icing should be used.  We chose to make our own homemade Cream Cheese icing.  Be sure to let your cupcakes cool to room temperature before you begin applying the icing.

The next step is to crush your candy canes into a powder using a stone mortar & pestle.   For a smoother taste, we recommend a natural candy cane that does not contain corn syrup.  You can find these at any grocery store.

When you crush the candy canes, they will turn into a white/red powder.  We highly advise that you do not use a mini chopper.  Using a mini chopper can be dangerous and is generally a bad idea because the larger chunks of candy cane will cause your chopper blade to get stuck or break.

Next, sprinke the candy cane “snow” powder on top of your iced cupcakes.

Once you have snowed your cupcakes, garnish each one with a piece of thin chocolate. I used Ghirardelli Peppermint bark.  These provide the perfect look because one side is chocolate and on the other white and red.  I got my daughter to help me break the chocolates into fourths and put them on the top of each cupcake.

 

The end result is a beautiful holiday cupcake that your guests will be sure to enjoy!

Potluck Buddies provides a fast loading, secure way to create a potluck, invite contacts and coordinate the menu for an event. With a focus of bringing communities together, Potluck Buddies motto is, “Eat together, Laugh together, Share the love.” Kris Spencer, CTO, commented, “During the design of Potluck Buddies, our main focus was to maintain the importance of empowering the idea of community being equal to providing an elegant and easy to use interface. Visitors to PotluckBuddies.com are able to create an account free of charge. Once logged in, the “Potluck Wizard” will take the party host through the potluck event creation process step-by-step. The party host can request and assign items to guests and then invite them either by private email invitation or send out a link to a password protected potluck page via SMS or social networks, where guests can RSVP.

 

Once invitations are sent out, the host can track who is attending and what menu items have been added by guests. New features and services are already in development and are made available to visitors on a regular basis.
