Holiday Cupcake With A Peppermint Twist
This quick and easy holiday cupcake is sure to be a hit at your next potluck!
Peppermint Twist Cupcakes
2 boxes, Ghirardelli Chocolate Squares (Peppermint Bark flavor)
10 Candy Canes
3 boxes, Cupcake Mix
(Makes 80 cupcakes)
To keep it simple, you can use any brand of cake mix to make your cupcakes. At our last potluck, we made two boxes of chocolate mix and one box of red velvet.
For the icing, a white icing should be used. We chose to make our own homemade Cream Cheese icing. Be sure to let your cupcakes cool to room temperature before you begin applying the icing.
The next step is to crush your candy canes into a powder using a stone mortar & pestle. For a smoother taste, we recommend a natural candy cane that does not contain corn syrup. You can find these at any grocery store.
When you crush the candy canes, they will turn into a white/red powder. We highly advise that you do not use a mini chopper. Using a mini chopper can be dangerous and is generally a bad idea because the larger chunks of candy cane will cause your chopper blade to get stuck or break.
Next, sprinke the candy cane “snow” powder on top of your iced cupcakes.
Once you have snowed your cupcakes, garnish each one with a piece of thin chocolate. I used Ghirardelli Peppermint bark. These provide the perfect look because one side is chocolate and on the other white and red. I got my daughter to help me break the chocolates into fourths and put them on the top of each cupcake.
The end result is a beautiful holiday cupcake that your guests will be sure to enjoy!
